In the 80’s Marcellino Zanesi designed the tool that 30 years later continues to be used by the professionals repair technicians around the world for the perfect setting of the espresso machine: the filter holder with manometer to measure the pressure of the incoming water.

A tool as simple as it is ingenious: simulating the effect of water in the dispensing of the coffee tablet, the pressure gauge connected to the filter holder allows to accurately measure the pressure exerted on the group, in order to check if there are losses in the circuit.

A further insight led in 2006 to the realization of the first filter holder with pressure gauge able to control at the same time both the pressure of the group that the water temperature

Thanks to the hole that allows the entry of the digital thermometer sensor directly into the filter holder body  it is possible to make a check on the water temperature in dispensing with the reliability of an instrument able to detect temperatures, with a range of -50°C+300°C(-58°F+572°F).

Having the correct control parameters enables professional technicians to adjust the setting of the pump and the expansion valve of the espresso machine. The ease of use allows the most expert bartenders to check the settings of the machine independently. 

The tireless Department of Research & Development of Nuova Ricambi continues to search for new products and solutions to improve the performance of the espresso machines. In 2013, the replacement of the sphere faucet system with a gigleur with hole of water flow has allowed to go from a faucet to a restriction to regulate the flow and thereby making it more homogeneous.

With this system the water is delivered directly into the filter holder without the addition of grounded coffee: in fact in the basket instead of the ground there is a gigleur that, thanks to the restriction, simulates the impact of water in a normal extraction. The data is displayed in real time and thus make it possible to adjust the dosage without using the coffee.
